The best part about this waffle recipe, is it is simple to make for the entire family.
I am not going to lie to you, my husband is the expert waffle maker in our house, and he typically involves the kids, which creates lasting memories for them of our lazy Saturday mornings. To be honest, those are getting fewer and farther between as they get older.
First things first, make your flax eggs. In a medium bowl, combine ground flax seeds with warm water and stir. Set aside.
Then, make your waffle batter. In a large bowl, stir together dry ingredients. To the medium bowl with flax eggs, whisk together the remaining wet ingredients.
Create a well in the dry ingredients and add your wet ingredients, whisking batter briskly until well combined.
Next, cook your waffles. Preheat your waffle maker according to instructions. When it is hot and ready, ladle or scoop up enough of your waffle batter to create your first waffle. We love to make it super simple for our kids so we use a large ice cream scoop. It works perfectly! You may need a different amount depending on the size of your waffle maker.
Cook waffles until light and fluffy on the inside, with crispy edges around the outside. Our waffle maker will beep when they are finished, roughly 4 minutes or so. Then, continue making waffles until your batter is gone.

- 2 tbsp ground flax seeds
- 5 tbsp warm water
- 1 cup whole wheat pastry flour
- 1 cup unbleached all-purpose flour
- 2 tbsp cane sugar (or coconut sugar)
- 4 tsp baking powder
- pinch salt
- 1 ½ cups unsweetened non-dairy milk, warmed (almond milk works great)
- ¼ cup plant-based butter or coconut oil, melted
- 1 tbsp vanilla extract
- Toppings (optional):
- Pure maple syrup
- Fresh berries or sliced banana
- Nut or seed butter
- Homemade Berry Chia Jam
- Hemp seeds
Directions
- Step 1 Preheat waffle iron, per heating instructions.
- Step 2 In a medium bowl, combine ground flax seeds and warm water, stir and set aside for 5 minutes.
- Step 3 In a large bowl, whisk together the flours, cane sugar, baking powder, and salt. Set aside.
- Step 4 To the bowl with flax seeds and water, whisk in warmed (to room temperature) unsweetened non-dairy milk, melted plant butter, and vanilla extract.
